Air Fryer Szechuan Spicy Chicken
四川辣子鸡丁


Equipment:
1) Air Fryer
2) Oven-safe bowl/container
3) Parchment Paper
4) Aluminum Foil 

Ingredients:
- 1 chicken thigh (boneless/skinless)
- 1 tbsp of minced garlic
- 1 tbsp of minced ginger
- ¼ cup of dried chilli
- 1 tbsp of Szechuan peppercorns
- ½ tbsp of Szechuan chili flakes
- 3 - 5 tbsp of Canola oil

Method:
1. Cut chicken thigh into bite-sized (u actually can leave some skins on)
2. In bowl, mix the chicken cubes with the marinade ingredients until fully combined and let it marinate in the fridge for at least 30 mins
3. In preheated air fryer (air fry mode), brush the pan with oil and place the chicken cubes and air fry at 190°c for 15 to 20 mins, flipping the chicken cubes halfway
4. Once done, remove and put it aside and prepare the "stir fry" ingredients
5. In an oven safe bowl, pour in canola oil, minced garlic, minced ginger, szechuan peppercorns, dried chilli and give it a mix
6. Cover the bowl w aluminum foil and air fry it at 190°c for about 3 to 4 mins until you can smell the chilli fragrance
7. Remove the foil and add in the chicken cubes, give it a stir and send it back to air fry for 5 mins
8. At the halfway mark, give the chicken cubes another stir and add in the chilli flakes then let it continue to cook until the time is up
9. Once cooked, remove with caution and enjoy it with a bowl of rice or snack it with a bottle of beer!

Note:
- I placed parchment paper on the crisper plate before putting the chicken cos I don't wanna wash the pan and also, I have to use it again to put the oven safe bowl to 爆香 the ingredients
- The parchment paper I got from Phoon Huat is quite good, the chicken cubes didn't stick onto the paper and I didn't have to oil the crisper plate

Duration: 20 mins of cooking + 30 mins of marinating + 10 mins of prepping
Serving: 1 pax
